Cast iron is the best value purchase you can make for a kitchen — it will outlive most appliances. This guide explains why the basic pre-seasoned skillet is all most people need, and when it's worth spending more. Every recommendation links to Amazon with our associate tag.
Start pre-seasoned, not enameled
A pre-seasoned skillet works out of the box and develops a better nonstick surface with use. Enameled cast iron is beautiful and lower-maintenance but costs several times more — worth it only if you cook acidic dishes often or hate seasoning.
10.25 inches is the do-everything size
It handles steaks, cornbread, and frittatas comfortably and moves from stovetop to oven to grill. The tradeoff is weight and basic seasoning care, which becomes second nature after a couple of rounds.
